Chicken & Basmati Rice Casserole

This recipe comes from the Dec 2011 issue of Family Circle. I changed this recipe so much that it's hardly the same recipe! It was pretty good. I would consider making a variation of this again.

Sauteed Cherry Tomatoes

I made this for Thanksgiving. I was looking for a vegetable side dish that people would actually eat. I got compliments on this. I assume that meant it was good. I enjoyed it, at any rate. It comes from The America's Test Kitchen Family Cookbook which is an EXCELLENT cookbook.

Bean and Tomato Casserole

This looked good. It comes from an old discount Borders cookbook (remember Borders, she thought wistfully?) called The Complete Mexican, South American, and Caribbean Cookbook. Yes, I branched out from the BH&G 2012 cookbook, but I'll be going back, no worries. So - this recipe was okay, but I didn't do quite well on the crumb topping. But read on. . . .

Garden Slaw with Spicy Asian Dressing

I don't like coleslaw and I thought this would help me like it. I do like Asian dressings. This one is a bit strong. That being said, my husband thought this was the best thing ever since he loves coleslaw and cabbage. He finished the whole thing right out of the tupperware and wants me to make this again. It thought it was okay, considering it had cabbage in it. . . .

Corn and Zucchini Pan Souffle

My husband thought this was more of a quiche than a souffle. It's from the BH&G Prizewinning Recipes 2012 booklet and it's listed as a side dish. It's a LOT of work and believe me, this was the star of the show. Main course. No side dish here. And it was very, very good. And the leftovers were perfect for breakfast.

The nutmeg adds some sweetness to it and it makes for a pleasant, unexpected surprise when you bite into this.

Coconut Chicken Chili

This was a lot of work. This did taste good, but not as spicy as you might imagine. I could have added more spice to it, actually. It needed more zing. I served it in bowls over rice.

Salmon Burgers (uh, Patties?)

This was delicious! Yes! And I'm not the biggest salmon fan out there by a long shot. Actually, I don't really like salmon. And I didn't like the salmon patties smothered in ketchup I grew up with. But I like my own salmon patties filled with all sorts of interesting things.

Crockpot Blackberry Cobbler - Not a Good Thing

I found a recipe in the Schwan's catalog for a blueberry cobbler made in the crockpot. I have a lot of organic Cascadian Farm blackberries in my freezer so I thought - why not? I can change the fruit. It turned out to be an inedible mess.

Hearty Vegetable Soup with Basil(less) Meatballs

Another really good recipe from BH&G Prizewinning Recipes 2012 Cookbook! I must admit I cheated and just bought meatballs. I could have saved money by buying ground meat and making the meatballs myself. I would have been able to afford the basil if I had done so. I just didn't want to take the time. . . .

Cranberry-Stuffed Pork Chops

This recipe comes - once again - from Better Homes and Gardens Prizewinning Recipes 2012 Cookbook. The 2 porkchops I bought turned out to be fairly expensive, so I almost didn't buy them. I did like this (inasmuch as I like pork chops, which isntmuch) but I thought the cranberries were a bit too sweet in this. I don't like my sweet mixed with my savory (not a sweet and sour girl here). My husband enjoyed this, though.

Cinnamon Roasted Chicken with Pumpkin-Sage Grits

Yes! This was excellent! I did have to vary this recipe from the original but it was so, so good! I would make it again. It's another from Better Homes and Garden Prizewinning Recipes 2012. Had an issue on finding canned pumpkin; more on that later.

Beef Rolls (Round Steak with Pickles)

This recipe was tasty, but I didn't cook the beef long enough for it to become really tender. I think I might make another version in a crock pot. Yes, pickles and beef taste good together. I saw enough recipes for this on the net so I thought I'd try it. It's the result of buying clearance thin round steaks and not having a clue what to do with them. This recipe is from About.com Southern Food by Diana Rattray.

Chicken Teriyaki - or, Pan-Fried Chicken Thighs with Teriyaki Sauce

This was a good recipe from The America's Test Kitchen Family Cookbook. It was something good to do with bone-in chicken thighs that were clearanced at the grocery store. This made the skin crispy. My kitchen became a greasy mess which is why I don't fry much, but I don't like soggy skin on bone-in chicken recipes.

Fun with Hollandaise

I tried this easy way to make Hollandaise from the America's Test Kitchen Family Cookbook and it was fun, easy, and it tasted good. I didn't get it perfect, but I will definitely try again.

Deep-Dish Mexican Meat Loaf Pie

This was excellent! I will be making this again! It was substantial and filling and tasted great covered with salsa. I used Drew's Thick and Chunky mild and medium.
